Welcome to my story! I’m Nikkie Windsor, and my journey to becoming a gut health specialist started with a life-changing decision. I quit a successful corporate career in search of a better quality of life and to discover a more natural approach to living with Crohn’s disease.

I spent over a decade in Costa Rica in pursuit of ways to improve my health. Through my investigations into the diet, cultivating a positive mindset, and adopting healthy lifestyle habits, I was able to develop a natural approach to enhancing gut health.

Today, I’m passionate about sharing my knowledge and experience with others. Witnessing the improved energy, better digestion, and overall greater vitality of my clients is incredibly satisfying. It’s a privilege to be a part of their journey toward optimal gut health.

My Story

Living with Crohn’s disease was a challenging experience that fundamentally reshaped the course of my life. After years of struggling with chronic pain, anaemia, extreme bathroom anxiety, and other unpleasant symptoms, I realized that the stress of my corporate career was only making things worse.

But rather than resigning myself to a life of limitations and the prospect of long-term drugs, I made a radical decision. I bought a ticket to travel the world, quit my job and embarked on a journey of self-discovery. Despite the challenges of travelling with Crohn’s disease, I refused to let it stop me from discovering the world.

A Natural Approach To Crohn’s Disease

As I journeyed through the Americas, I learned to plan for every circumstance imaginable. Consequently, I discovered that life is full of unexpected adventures. I fell in love with a remote surf village on the edge of the jungle in Costa Rica, where I immersed myself in culinary medicine, growing my own food, fermenting, foraging, and experimenting with exclusion diets.

Over time, I developed a holistic approach to managing my health, incorporating massage therapy, energy healing, and medicinal plants, and becoming certified as a Reiki Master. I also discovered the value of exercise, mindfulness, meditation, and the power of breath for stress management.

After starting the work to adopt a positive mindset, I realized how negative my thought patterns had been. I’ve become acutely aware of the amount of negativity that permeates everyday conversation. Moreover, with daily practice, I maintain a positive outlook through my work and interactions.

I am incredibly grateful for the lessons I learned in Costa Rica, which led me to discover a natural approach to managing Crohn’s disease. This journey has been ongoing, and I am continuously learning and growing in my knowledge of gut health.

Empowering Others

Today, I am proud to say that I have transformed my passion for gut health into a successful business, helping others to transform their digestive health and well-being naturally through dietary and lifestyle changes. I believe that everyone should be able to enjoy eating without consequence and that you just need to identify the right style of eating for you. The impact that diet and lifestyle have on our quality of life fascinates me. Helping people identify how simple changes can transform their health and well-being is extremely gratifying.

Life After The Jungle

When I am not coaching clients or studying new approaches to health and wellness, I can be found in my kitchen, fermenting new recipes, experimenting with medicinal plants, and foraging for wild ingredients. I am passionate about creating delicious food that is beneficial to our health and well-being. In my free time, I also enjoy practising yoga, spending time with my 2 Costa Rican dogs, and exploring new cultures.

Living with Crohn’s disease has taught me that life is not about doing what society expects of us, but about forging our own paths and finding fulfillment on our own terms. And for that, I am truly grateful.

A Transformative Journey

My journey with Crohn’s disease and IBS has taught me the importance of embracing the present moment and finding joy in life’s simple pleasures. My time living in Costa Rica, immersed in the culture of Pura Vida, reinforced these lessons and has left me forever grateful for the experience. I strive to incorporate the principles of Pura Vida into all aspects of my life and work, helping others to discover the transformative power of living in the moment and finding peace and happiness within themselves.

What is ‘Pura Vida’?

“Pura Vida” literally means “Pure life” but emblematically it is a feeling, an emotion and the embodiment of a way of life.

Pura Vida is being perfectly content with your existence in this moment.

A true understanding of Pura Vida comes only from experiencing it but I try to share its essence at the heart of what I do.

About IBD and IBS

Crohn’s disease is an inflammatory bowel disease (IBD) that causes inflammation and physical damage to the intestinal tract. The symptoms of Crohn’s disease are not limited to the gut and can include extreme urgency to use the toilet, chronic diarrhoea, constipation, intestinal damage, abdominal bleeding, and pain. Additionally, Crohn’s disease can cause weight fluctuations, anxiety, joint pain, skin issues, hair loss, and conditions associated with malnutrition. In contrast, irritable bowel syndrome (IBS) is a functional condition where the bowel looks perfectly normal but does not function correctly, leading to lower quality of life. IBS shares some symptoms with IBD, such as bloating, diarrhoea, and pain, but it does not cause inflammation or physical damage to the intestines. It is important to receive a proper diagnosis from a healthcare provider to determine the best course of treatment for your symptoms.

My Gut Health Journey

At age 15, I was diagnosed with Crohn’s disease, which brought on chronic pain, anaemia, chronic diarrhoea, extreme bathroom anxiety, fatigue, rapid weight loss, hair loss, skin issues and other unpleasant symptoms. I’ve undergone surgery to remove the last part of my small intestine and my appendix, known as an ileocecal resection. At 37, I was diagnosed with irritable bowel syndrome (IBS). While IBD and IBS have brought their own set of challenges, I am grateful for the experience as it has led me to become a gut health coach and help others who are struggling with similar conditions.

Weight loss

The Weight Challenge

Crohn’s disease can cause significant weight loss due to malabsorption of nutrients. During the worst flare-ups of my symptoms, I have experienced severe underweight and malnutrition, although I generally maintain a slim physique.

Zero weight management skills

No Pain but Lots of Gain

Following years of battling with active symptoms, I eventually achieved remission, which allowed me to rediscover the joy of food. However, during this time, I also came to the realization that I lacked proper weight management skills, and I witnessed firsthand the detrimental effects that obesity can have on one’s mental well-being

Living Life to the Full

Dealing with chronic disease can be incredibly difficult, but with careful planning, unwavering determination, and a good amount of stubbornness, one can overcome significant hurdles. For instance, my journey has allowed me to take part in a street carnival in Costa Rica, dancing with a troupe and celebrating life despite the challenges.
